Quinoa Salad with Coriander dressing

Quinoa : 1/2 Cup
Water: 2 Cup
Red Onion: 1 small
Capsicum: 1 small
Tomato: 1 Small
Cucumber: 1
Olive Oil: 2 tablespoon
Lime juice: 1 tablespoon
Salt and Crushed Black pepper : to taste
Green Coriander leaves: 1/2 Cup

Bring water to boil in a deep pan. Add quinoa to the water.Cover and let it simmer on low flame for 10-15 minutes till the quinoa is cooked completely. Turn off the heat allow the quinoa to cool.

To prepare the salad dressing, take olive oil, lime juice, chopped coriander leaves, salt and black pepper in a bowl. Stir it well.

Now cut onion, capsicum tomato and cucumber into thin slices.
In a large deep bowl, bring the sliced veggies and quinoa together. Pour the dressing over it.
Toss the ingredients gently so that the flavors incorporate well.

Garnish it with coriander or mint leaves before serving.
