Grilled Cheese Corn Sandwich with Mango Chutney


Boiled Corn: 1 Cup
Cheddar Cheese Slices: 4
Whole Wheat Bread: 8
Unsalted Butter for cooking
For Mango Chutney:

Raw Mango:1
Coriander Leaves: 1 Cup
Green Chilli: 1
Mint Leaves: 6-7 Leaves
Ginger: 1 inch bud
Water: 4 tablespoon
Salt as per taste

Bring all the chutney ingredients in a blender and  churn them to make a fine paste.

Preheat a flat pan on the stove. Meanwhile, take a bread slice. Spread mango chutney over it. Top it with cheese slice and 2-3 tablespoon of boiled corn. Cover it with a bread slice. Press it down gently.

Heat half a tablespoon of butter on the pan. Put the sandwich on the pan and press it with a spatula. Once the sandwich  turns a little golden brown and the cheese starts melting, flip it over and toast it on the other side too.

Repeat the process with the rest of the bread slices.
Your Grilled Cheese corn sandwich with mango chutney is ready to eat.

Serve it hot with ketchup.
