Stuffed Peppers


Ingredients:

Bell Peppers (Capsicum): 2
Soya Granules: 1/2 Cup
Minced Garlic: 1 Tablespoon
Boiled Rice: 1/2 Cup
Boiled Corn: 1/4 Cup
Jalapeno: 1
Onion: 1
Olive Oil: 2 Tablespoon
Oregano: 1/2 Tablespoon
Tomato Chilli Sauce: 4 Tablespoon
Salt and Pepper to taste
Shredded Cheese blend: 1 Cup ( Mix of Mozzarella,Cheddar and Parmesan combined together)


Method: 
Cook the soya granules as per the instructions on the packet. Drain it in a colander and keep it aside.
Heat olive oil in a deep pan. Add chopped onion and minced garlic. Saute till the onions turns golden brown. Add oregano, salt and pepper. Add the tomato chilli sauce.  Add the the boiled soya granules, boiled rice and boiled corn to the tomato sauce. Toss the ingredients well and cover it with a lid for  2-3 minutes . Let the flavors combine. Add the sliced jalapenos to the pan.
Turn off the heat and transfer the ingredients to a bowl. Allow it to cool.  Add half of the cheese mixture to the bowl.This is the stuffing for the peppers.

Cut the bell peppers in to halves.Scoop out the seeds.  Now spoon the stuffing in each of the slit peppers.Top it with the remaining cheese.
Transfer it to a baking tray and brush extra virgin olive oil on the sides of each pepper for that extra gloss.
Bake it in a preheated oven at 180C for 30 minutes or till the cheese starts bubbling.

Your delicious Stuffed Peppers are ready to eat.
Serve it hot with garlic bread !
