Guacomole Tomato Sandwich

Ingredients:

Whole Wheat Bread: 8 Slices
Tomato: 2 large
Cucumber: 2
Onion: 1 large
Coriander leaves: handful
Iceberg Lettuce: 
Extra Virgin Olive Oil: for garnish
Salt and Pepper to taste
Guacomole:
Ripe Avocado: 1
Crushed garlic: 1 tablespoon
Extra Virgin Olive Oil: 1 tablespoon
Lemon: 1 tablespoon
Salt and pepper to taste

Method:
 To prepare guacomole, scoop out the pulp from the avocado. Add crushed garlic, extra virgin olive oil, lemon juice, salt and pepper.  Mash it with a fork till the ingredients mix well.Your guacamole is ready.
Slice onion, tomato, cucumber into thin circles. Roughly chop lettuce and coriander leaves.
Now, divide the guacomole among all the bread slices. Spread it evenly on the bread. Layer it with lettuce,sliced tomatoes, cucumber and onion. Sprinkle salt and pepper  on the ingredients as per your taste. Drizzle some olive oil on the ingredients. Top it with the chopped coriander leaves. Cover it with the bread slice and press it down gently.

Cut it into triangles and serve it with any drink of your choice.

Your Guacomole Tomato Sandwich is ready to eat.
