Pumpkin Pancake with Honey Almond Apples


Ingredients:
Plain Flour: 2 Cup
Baking Powder: 2 Tablespoon
Grated Cinnamon: 1/2 teaspoon
Grated Nutmeg: Pinch
Powdered Sugar: 1 Cup
Milk: 1 Cup or less
Salt: pinch
Vegetable Oil:  1/4 Cup
Pumpkin : 250 Grams
Oil for Cooking
Toppings:
Apple: 1
Almonds Julienne: 1/4 Cup
Honey: 4-5 Tablespoon

Method:
Wash pumpkin thoroughly to discard any dirt on the skin. Peel it off.
Cut the pumpkin into thick cubes. Pressure cook it in a cup of water for 1-2 whistles.
Turn off the heat and strain the pumpkin pieces to discard any excess water.
With the help of a spatula, press the pumpkin to make a thick paste/ puree.

Now, in a large bowl, take flour, cinnamon, nutmeg, sugar and salt and mix it well. Add 1/2 Cup pumpkin puree and mix it with the ingredients. Add milk and oil  gradually and keep mixing the ingredients to avoid any lump formation.  You can adjust the quantity of milk if the batter is too runny or thick.

Your pancake/ waffle batter is ready. Now heat a non stick griddle and pour a ladleful batter on it. Once it starts puffing up, flip it over and cook on the other side till golden brown.
 Repeat the process with the remaining batter. Your pancakes are ready.

Now to prepare the toppings, take a 2 tablespoon of unsalted butter. Add peeled and thinly sliced apple pieces. Cook for 2-3 minutes till it turns a little brown . Add almond julienne. Toss it well.
Turn off the heat and add honey and mix it well.

Now, top the pancakes with apple and almonds and serve it hot.
