Burger Buns: 6
Fresh Yoghurt: 2 tablespoon
Pickled Gherkins: 8 slices
Onion: 1 (large)
Red Kidney Beans: 1 Cups
Bread Crumbs: 1 Cup
Oregano: 1/2 teaspoon
Salt and Fresh Ground Pepper to taste
Oil for Shallow frying the patties.
Fresh Green Coriander: 1 medium bunch
Extra Virgin Olive Oil: 1/2 Cip
Garlic cloves: 8-10
Dry Red Chilli: 2
Vinegar: 1 tablespoon
Salt and Pepper to taste.
Soak kidney beans overnight in large bowl of water. Pressure cook it till its cooked evenly.
Drain the beans and discard any excess water.
Mash the boiled beans with the potato masher and add oregano, salt and pepper to it. Squeeze in some lemon. Mix it well. Make 8-10 balls and flatten it on palm to make patties. Dust the bread crumbs on bean patties.
Shallow fry the patties on a pre heated gridle till it turns golden brown. Flip it over and cook on the other side too.
Your Bean patties are ready now.
Meanwhile, in a flat pan, dry roast garlic and dry red chillies till they turn dark. Make a coarse paste of the roasted ingredients with the help of mortar and pestle. Finely chop green coriander leaves. In a deep large bowl, take coriander leaves, garlic-red chilli paste, salt and pepper. Squeeze in the lemon. Now add extra virgin olive oil and mix the ingredients well. Your Coriander dressing is ready.
Slice Onion, tomato, capsicum into thin round circles. Cut the burger buns into half horizontally. Take the lower part of the bun and spread a tablespoon or more of fresh thick yoghurt.
Layer it with 2 slices of tomatoes,a bean patty, a slice of Onion, 2 thin slices of pickled gherkins, capsicum and sliced jalapenos. Sprinkle some salt and pepper over the veggies.
Top it up with a tablespoon of coriander dressing. Cover it with the upper part of the bun.
Your delicious Bean Burger is ready to serve.

Note: To make the perfect patties, refrigerate the bean balls for 2-3 hours and then dust it with bread crumbs and shallow fry it .
