Veg Calzones

Plain flour: 2 Cups
Active Dry Yeast : 1 packet ( approx 2.5 tablespoon)
Sugar: 1 tablespoon
Salt: 1/2 teaspoon
Warm Water: 1 Cup
Olive oil: 1 Table spoon

For the Stuffing:
Mozzarella Cheese: 1 Cup
Minced Garlic: 1 tablespoon
Capsicum: 2
Onion: 2 large
olive Oil: 2 Tablespoon
Oregano: 1/2 tablespoon
Salt and pepper to taste


Dissolve yeast in a small bowl as per the instructions on the packet.
Take flour in deep bowl. Add sugar, salt and oil. Mix it well. Add the dissolved yeast along with the water. Knead it to make a smooth dough. Lay it covered with a damp cloth for 1-2 hours till it rises to double its size.
Meanwhile, chop onion and capsicum into thin slices.
To prepare the stuffing, take oil in a pan. Add onion and minced garlic. Saute it a bit till onions turn translucent.Add capsicum, oregano salt and pepper. Stir fry it on high flame for 2 minutes..
Turn off the heat and transfer the veggies to a bowl. Allow it to cool. Add shredded mozzarella cheese to the veggies.  Your stuffing is ready.

Now divide the dough and stuffing into 2 equal parts.

Roll out the dough on a floured surface to make a  thin large circle. Spread half of the round with the prepared stuffing. Cover it with the other end and seal the edges.

Repeat the similar process with the rest of the dough and stuffing.
Bake it in a preheated oven at 200 C for 20-30 minutes on a cookie sheet. Bring it off the oven and cut it into pieces.

Your Veg Calzones are ready to eat.

Serve it hot with any drink of your choice.

Note: You can have any variation in the stuffing. Some popular choices being spinach, mushrooms, corn and zucchini.
