Spinach: 1/2 kgs
Mushroom: 250 gms
Minced garlic: 1 tablespoon
Whole Wheat Bread Slices: 8
Cheddar Cheese slices: 4
Butter: 2 tablespoon for stuffing
Salt and Freshly ground black pepper to taste
Butter for sandwiches.
Wash spinach and mushroom thoroughly.
Take off the stems of the mushroom and chop the mushrooms into thin slices. Boil them for 10 minutes till its cooked evenly. Strain the mushrooms and discard the water. Similarly, finely chop spinach and onion.
In skillet, take butter. Once it gets heated, add minced garlic and onion. Allow the onion to get a little golden brown. Add spinach and boiled mushrooms. Saute the vegetables on high flame till the spinach starts wilting. Add salt and pepper. Turn off the heat. Stuffing for the sandwich is ready.
Now take a bread slice and spread the spinach and mushroom stuffing on it. Layer it with a cheese slice.Cover it with another bread slice.Brush the outer sides of the bread with the butter.
Heat the griddle. Put the sandwich on it and press it with a spatula for the breads and the ingredients to bind.
Flip the sandwich over and cook on the other side too.
Your delicious Spinach and Mushroom Sandwich is ready to eat.
Cut it into 2 halves and serve it hot with tomato ketchup and pickled gherkins.
