Eggplant Parmesan


Eggplant: 1 large
Pasta Sauce: 2 Cups
Bread Crumns: 1 Cup
Grated Mozeralla Cheese: 1/2 Cup
Grated Parmesan Cheese: 1 Cup
Olive Oil: 2 Tablespoon
Oregano: 1 teaspoon
Freshly ground pepper : 1/2 teaspoon
Red Chilli Flakes: optional

 Slice eggplant into 1/4 inch rounds. Brush each piece with olive oil, salt and pepper followed by coating it with bread crumbs. Now,bake the egg plant slices  in a preheated oven at 200C for 20 minutes till eggplants are evenly cooked.
Bring the eggplants out of the oven.
In a separate glass baking dish, spread 1/2 cup of Marinara sauce. Layer it with baked eggplants. Pour 1/2 cup of marinara sauce over the eggplants again.Top it with 1/4 cup of mozzarella cheese and Parmesan each. Repeat the similar process with the remaining eggplant pieces. The top layer should be that of mozzarella and Parmesan.
Bake it in a preheated oven at 200 for 10 minutes or till the cheese starts bubbling.
Bring it out of the oven and allow it to rest for 10 minutes before serving.
Season it with oregano and chili flakes.

Serve it warm with Garlic bread.
