Arbi Masala ( Dry)
Arbi: 1/2 Kg
Onion: 1 small
Green Chilli: 1 (optional)
Carom seeds( Ajwain) : 1/2 teaspoon
Mustard Seeds: 1/2 teaspoon
Mustard oil: 4 tablespoon
Turmeric Powder: 1/2 Teaspoon
Sabzi Masala: 1/2 Tablespoon
Lemon : 1/2
Salt to taste
Green Coriander: handful for garnish
Boil arbi in pressure cooker for around 3-4 whistles. It should be cooked evenly and not too mushy.
Peel the arbi and cut it into thin circles.
In a large shallow pan, take oil. Allow it to heat. Add mustard and carom seeds. Once the seeds starts cracking, add chopped onions and green chilies. Saute till the onions become golden brown in color.
Add mustard powder, sabji masala, salt and lemon juice.Stir it twice. Add the sliced arbi and stir it such that the masala get evenly coated on all the arbi pieces. Let it sit on the flame till the arbi starts turning crisp from outside. This should take around 8-10 minutes. DO NOT cover the pan with any lid. It would bring in moisture and the vegetables would turn soggy.
Turn off the heat and transfer it to a serving bowl.
Garnish it with chopped coriander leaves.
Serve it hot as a side dish for your lunch or dinner meals.
Note: Good amount of oil is needed to prepare this side dish.
