Crispy Parmesan Potatoes

Baby Potatoes : 1/2 Kg
Pure Olive oil: 3 Tablespoon

Grated Parmesan Cheese: 1 Cup
Vinegar: 1 tablespoon
Oregano:1 teaspoon
Salt to taste
Freshly Ground Black Pepper: 1/2 Teaspoon
Basil leaves: 4-5

Wash and boil the potatoes in a deep pot till the potatoes turn tender but not too mushy. Retain the skin.Cut the baby potatoes into halves.
In a separate pan, take olive oil. Once it gets a little heated, throw in oregano, black pepper, salt and vinegar. Add boiled potatoes. Toss the potatoes on a high flame till it gets coated with the condiments. Allow the potatoes to turn a little golden brown.

Bring it off the pan. Transfer the potatoes to a baking dish , add grated parmesan and chopped basil leaves. Mix it well. Bake it in a preheated oven at 210 C for 10-15 minutes.

Your Crispy Parmesan Potatoes are ready to eat. Serve it with sour cream.
