Basmati Rice: 1 Cup
Sugar: 1/2 Cup
Water: 1/2 Cup(for Sugar Syrup)
Assorted Dry Fruits: 1/4 Cup
Saffron Strands: 8-10
Milk: 1/2 Cup
Green Cardamom: 3
Cinnamon Stick: 1 small
Clarified Butter( Desi Gee): 2 tablespoon
Boil rice in 1.5 cups of water with cinnamon sticks and crushed cardamom, till almost done. Leave it a little uncooked. In a small bowl, soak saffron strands in 1/2 a bowl of milk.
In a separate pan, take desi ghee. Shallow fry all the assorted dry fruits.
Meanwhile, boil sugar in water till it dissolves completely. This is your sugar syrup.
Now mix this sugar syrup with rice along with the remaining ghee from the pan. Bring the rice on the gas stove and let it cook with lid covered. Add milk to the rice and let it cook for 2-3 minutes.
Turn off the heat and check if the rice is cooked completely. If not, you may cook for another minute or so.
Your saffron rice is ready to eat. Garnish it with fried nuts and saffron.
Serve it warm.
