Hot and Sour Soup

 Fresh Corn Kernels: 1 Cup
Carrot: 1 small ( chopped into small cubes)
Capsicum: 1 small ( Chopped into small cubes)
French Beans: 1/4 Cup( cut into small pieces)
Spring Onions: 2 stalks (chopped)
Tofu: 1/4 Cup cut into cubes
Salt & Freshly Ground Pepper to taste
Oil: 2 tablespoon
Ginger Garlic Paste: 1 tablespoon
Soy Sauce: 1 tablespoon
Vinegar: 2 tablespoon
Cornflour: 2 Tablespoon (dissolved in 1/4 cup of cold water)
Water: 4 Cups


Take oil in a deep pan. Add ginger garlic paste and saut√© it. Add chopped vegetables and tofu and stir it. Add the water to the pan and let it simmer on low flame for 3-5 minutes. Add vinegar and soy sauce followed by cornflour mix. Stir in between and bring it to boil till the soup attains a little thick consistency.
Add salt and freshly ground pepper to taste. Bring it off the flame and pour a ladleful in  soup bowls.
 Add chopped spring onions for garnish.

Your delicious Hot and Sour Soup  is ready to eat !Serve it hot.
