French Onion Soup


Onions: 6 (Medium Sized)
Unsalted Butter: 3 Tablespoon
Bay Leaves: 2
Star Anise: 2
Vinegar: 1 tablespoon
Plain Flour: 2 tablespoon
Minced Garlic: 1 Tablespoon
Water: 2-2.5 Cups
Salt and Freshly ground Black pepper : as per taste
Thick Slices of Bread: 4-6
Mozzarella  Cheese :1/2 Cup( shredded)


Peel and slice onions into thin strips. Take butter in a deep non stick pan.
Allow it to heat. Add minced garlic, bay leaves and star anise. sauté it. Add sliced onions. Stir it for a while till the onions turns golden brown in color. This should take good 20-25 minutes.
Meanwhile, mix plain flour with 1/4 cup of water. Add this to the onions. Add the remaining water followed by vinegar,salt and freshly ground black pepper. Let it simmer.

So while your soup in getting ready, toast the bread topped with shredded mozzarella cheese in a preheated oven ( 200C) for 10 minutes. Once the cheese melts and it turns brown, bring the breads out of the oven.

Turn off the heat and bring the soup pan off the stove. Take bay leaves and star anise out of the soup and discard them.Pour a ladleful soup in a bowl and serve it with the toasted bread. Season with additional black pepper , if need be.
