Gajar Ka Halwa

Ingredients:
Red Carrots : 6-7 (medium sized)
Whole Milk (Full cream milk): 4 Cups (1 Litre)
Sugar: 1/2 Cup
Green Cardamom: 3
Cashews: 6
Almonds: 6
Raisins: 8-10
Clarified Butter(ghee): 2 tablespoon


Method:
Wash and peel the carrots. Grate them. In a thick-bottomed pan, add carrots and milk. Allow it to cook on a low flame for 1-2 hours or till the milk evaporates completely. Keep stirring in between so that the carrots does not stick to the bottom of the pan. You can add sugar when milk has almost evaporated. Stir the contents of the pan so that the sugar gets dissolved and blends with the carrots.Bring the pan off the heat once all the milk is evaporated and carrot is completely cooked and softened.

In a separate pan, take ghee. Allow the ghee to heat and then add chopped cashews, almonds, raisins and crushed green cardamom. Sauté it for a minute to allow the nuts to turn golden brown. Add cooked carrots. Stir it so the ingredients mix well.

Turn off the heat and serve it hot. You can garnish Gajar ka Halwa with almonds juliennes.

Your Gajar ka Halwa is ready to eat !

NOTE: Instead of using Khoya, I have used Full cream milk which gives equally good result.

  2. Use boil carrots to make halwa..it will save ur time...n tastes equallygud
