Cream of Broccoli Soup

Cozy up your evenings with this warm and flavorful Cream of Broccoli soup. This thick creamy textured soup is quite easy to make too. Hope you relish it as much as we did.


Unsalted butter: 4 tablespoon
Onion:1 medium
Plain flour: 5 tablespoon
Water/Vegetable stock : 3 Cups( approx. 750 ml)
Broccoli: 1 medium size
Fresh Cream: 2 tablespoon
Salt and Pepper to taste

 Before starting to cook,cut broccoli into small florets.
In a  deep pan, heat butter. Once the butter melts, add finely chopped onion. Sauté it till it turns translucent. Add flour and whisk it well. Add water/vegetable stock. Keep stirring so that no lumps are formed.Let it simmer on low heat for 5-6 minutes. Add broccoli florets. Wait for the florets to turn a little tender. This would take another 3-4 minutes. Add salt.
Turn off the heat.
Transfer the entire contents from the pan to the blender. You can do this in batches too if the blender does not accommodate the entire mix. Puree the mixture until its smooth.
Bring the soup back to the pan and heat it again before serving. Add cream and  freshly ground pepper.
Turn off the heat and serve it with any bread of your choice.
