Baked tomatoes with Vinaigrette dressing and Mozzarella Cheese


Ingredients:
Tomatoes: 8
Extra Virgin Olive Oil: 1/2 Cup
Vinegar: 2 tablespoon
Oregano: 1/4 tablespoon
Fresh Basil Leaves: handful
Mozzarella:1/2 Cup
Salt and Pepper to taste


Method:
Wash tomatoes and pat them dry with a kitchen towel.
Cut the tomatoes into halves.
In a bowl, take olive oil, vinegar, oregano, salt and pepper. Whisk them such that the ingredients blend well. Your Vinaigrette dressing is ready.
Meanwhile preheat oven to 200C.
Line your tomatoes on a baking sheet. Pour the entire vinaigrette dressing over the tomatoes.
 Bake the tomatoes for around 15 minutes or till they become  a little charred.
Take the tomatoes out and sprinkle some grated mozzarella and chopped basil leaves . Bake for another 3-4 minutes till the cheese starts melting.

Your Baked Tomatoes with Vinaigrette dressing and  Mozzarella Cheese is ready to eat.

Serve it warm with any bread of your choice.
