Vegetarian Lasagna


This is an easy to make Vegetarian Lasagna recipe which is loaded with Green Veggies and herbs and  is quite an inviting meal  by itself.
Ingredients:
Lasagna Sheets: 12
Broccoli: 2 cups (small florets)
Minced garlic: 1 tablespoon
Spinach: 2 cups (finely chopped)
Ricotta Cheese: 1/2 cup
Parmesan Cheese: 1 Cup
Olive Oil: 2 tablespoon
Oregano: 1/2 tablespoon
Salt and Pepper to taste
Pasta Sauce: 2 Cups
Mozzarella Cheese: 1 Cup Grated


Method:
Bring lasagna sheets to boil as per instructions on the packet.
To prepare the stuffing, take olive oil in a deep pan.
Add  garlic to it and saute for a minute. Add spinach and broccoli florets.Add salt and pepper.
Cover it with a lid and let it cook for around a minute or two. If there is still some water in the pan from spinach, saute it on a high flame to let the water evaporate.
Bring the spinach and broccoli mix in a bowl and allow it to cool. Add Ricotta cheese and oregano.Your lasagna stuffing is ready now.
Now pre heat your oven at 200 C.Meanwhile, grease your baking dish with olive oil.
Spread the pasta sauce over it. Now layer it with lasagna sheets, spinach and broccoli stuffing and Parmesan cheese. Repeat the process for two layers of Lasagna sheets. Top it with pasta sauce and some shredded Mozzarella.
Cover the baking dish with an aluminum foil to avoid it getting the lasagna sheets too stiff.
Bake it in the preheated oven for for 30 minutes or till the cheese starts bubbling and is brown in color.

Your Vegetarian lasagna is ready to serve. Enjoy !!
