Vegetarian Greek Salad (Horiatiki Salata)

Here's my Big Fat Greek Salad. Perfect for one of those Mid Summer Night meals.

Ingredients:
Iceberg Lettuce: 1 small
Cucumber: 1
Red Onion: 1 Small
Yellow Pepper: 1
Cherry Tomatoes: 1/2 Cup
Black Olives: 1/4 Cup
Feta Cheese: 1/2 Cup

Dressing:
Olive Oil: 3-4 tablespoon
Oregano: 1/2 tablespoon
Minced garlic: 1/2 tablespoon
Lemon Juice: 1 tablespoon
Salt and pepper to taste



Method:
Tear Iceberg lettuce into bite sized pieces. Slices Onion,cucumber and yellow peppers into thin rings or strips.Cut cherry tomatoes and olives into halves. Crumbles feta Cheese by hand.
Lay all the vegetables on a salad bowl. Meanwhile, mix your dressing ingredients in a tight lid jar and shake it well. Pour the dressing mix over the salad.

Toss it gently so that the dressing gets coated evenly on the vegetables.
Serve it chilled.
