Plain Flour(Maida): 2.5 cups
Oil (for kneading the dough): 1/2 cup
Water: 1/2 cup

For Stuffing:
Khoya: 1 cup
Powered Sugar: 1 cup
Desiccated Coconut: 4-5 tablespoon
Cashews : 2 tablespoon ( chopped)
Raisins: 1 tablespoon
Chironji(Charoli): 2 tablespoon
Crushed Green Cardamom: 1/2 teaspoon
Almonds :2 tablespoon ( chopped)
Oil for Frying

Take plain flour in a deep dish. Add oil. Start binding the flour with the help of your hand. Add water gradually and make a tight dough. Cover it with a muslin wet cloth and allow it to rest.
Roast khoya in a pan till golden brown. Bring it off the pan and allow it to cool.
Now take all the stuffing ingredients in a bowl and mix them well.

Next step, divide the dough into small balls. Take a ball,roll it out into 4 inch circles. Put this circle on a greased gujhiya mold. Add a spoonful of stuffing on the mold and line the edges with a a little bit of water. Close the mold and press it tight.
Open the mold and take out gujhiya. Repeat the process for rest of the dough.
Keep the gujhiyas covered under a damp cloth.
Once you are done preparing all the gujhiyas, deep fry them in oil on a medium heat.

Strain them on a kitchen paper towel to remove any excess oil.

You Gujhiyas are ready to serve.

 NOTE: If you don't have a gujhiya mold, you can use steel glass/bowl to cut uniform size circles. Fill half of each circle with the  stuffing and line the edges with water,seal them and continue as above.
