Gobhi Musallam

(Whole Cauliflower simmered in onion and tomato mix and enriched with cashews and fresh cream.)
Our very first presentation in Awadh series is going to be Gobhi Musallam. Whole cauliflower cooked in onion and tomato mix and enriched with cashews and fresh cream.Beautiful presentation for your party platter.
Cauliflower: 1 small (whole)
Bay leaf:1
Onion: 2 large
Ginger- Garlic paste: 2 tablespoon
Green chilli: 1(optional)

Tomato : 3 medium
Kasoori Methi: 1 table spoon
Turmeric powder :1/4 tablespoon
Garam Masala: 1/2 tablespoon
Coriander powder: 1 tablespoon
Red Chilli Powder:1/4 tablespoon
Cashew Paste: 2 tablespoon
Cream: 1/4 cup

Oil: 4 tablespoon
Water: 1/4 cup
Coriander leaves,Ginger jullines and Green chilli for garnish

Boil cauliflower in a large pot with salt and bay leaves. The cauliflower should be partially cooked not too soft.
Chop onion into thin slices. Take 3 tablespoon of oil in a kadhai and stir fry onions. Add ginger garlic paste to it. Add chopped tomatoes, turmeric powder,coriander powder,red chilli powder,salt,garam masala, kasoori methi and cashew paste. Cover it and let it cook for 3-4 minutes till the oil starts leaving the sides of the kadhai.Add water and cook it for another minute or so.Turn off the heat and add some freah cream to the masala. Mix it well.
Meanwhile, drain the cauliflower in a strainer and remove any excess water from it.
Take 2 tablespoon of oil in a deep pan. Shallow fry cauliflower turning it over in between such that it uniformly gets golden brown in color. Pour the prepared masala over the cauliflower such that it gets coated from all the sides.Cover it and cook it for around 2 minutes. Turn off the heat and plate it on a flat dish.

 Garnish it with coriander leaves,ginger julienne and a slit green chilli.
Your Gobhi Mussallam is ready to eat. Serve it hot with roti or rice.
