Galouti Kebabs(Vegetarian)

It is said that people belonging to Nawab Gharana considered it unsophisticated biting into meat or chewing onto them. The cook in the royal circle were asked to present delicacies that would avoid such dining disgrace.
And Galouti Kebabs was the result of one such gourmet indulgence where the main ingredients were pounded and minced to make a paste so it could do justice to its melt-in-the-mouth recipe. Here is our vegetarian version of Galouti Kebabs which we have perfected after years of experimentation. 


Ingredients:
Chana Daal (Bengal Gram): 1 Cup
Yam: 500gms
Bay leaves: 2
Green cardamom:3
Cloves:2
Black pepper corns: 8-9
Black cardamom : 2
Ginger-Garlic paste: 2 tablespoon
Garam masala: 1.5 tablespoon
Red Chili Powder: 1/2 tablespoon
Lemon: 3
Butter: 50 gms
Salt : 1/2 tablespoon
Green Coriander leaves: handful
Chat Masala: 1/2 tablespoon


Method:
Wash and peel yam. Boil it in pressure cooker along with 2 cut lemons.
Boil chana dal in a pressure cooker along with red chilli, black pepper corns,green cardamom,bay leaves for around 2 whistles. It should be just soft but not too mushy. Once the dal is boiled, take out all the whole spices and discard them.Put the dal in the strainer to remove any excess water.

In a deep bowl, pound boiled yam to make a fine paste.
While the dal is still hot , add butter to it and  mash chana dal too to make a fine paste. Crush black cardamom in a mortar and pestle to make a coarse powder.
Now mix yam and chana dal together. Add ginger garlic paste, red chilli powder,lemon,garam masala,salt and black caradamom powder.Add Green coriander leaves.
Mix all the ingredients well.Divide the mixture into equal sized balls.
Now take a ball sized mix and flaten it on your palm. Shallow fry them on a pre heated tawa with desi ghee on it. Flip it over and fry it on the other side.

Your  Galouti Kebabs are ready to eat.Sprinkle some chat masala on kebabs.
Serve it with Green chutney and thinly sliced onion rings.
