Bharwan Tamatar

Bharwan Tamatar aka Stuffed Tomato is our next presentation in Awadhi series. Its a classic comfort food which is mostly served as a side dish. If you would like to cook the way it was done in Nawabs kitchen, then here is the recipe just for you
(Stuffed tomatoes with cottage cheese and dry fruits)

Tomatoes: 6
Fresh Cottage Cheese(paneer): 1.5 cups
Onions: 1
Grated ginger: 1 tablespoon
Green peas: handful
Figs: 1 (cut into small pieces)
Cashews: 1 tablespoon
Charoli(Chironji): 1/2 tablespoon
Red Chilli Powder: 1/4 teaspoon
Garam Masala: 1/2 tablespoon
Desi Ghee( Clarified Butter): 2 tablespoon

Coriander Leaves: handful

Cut the top part of the tomatoes and scoop out all the pulp. Give your tomatoes a slight cut at the bottom so that it can stand in an upright position.
Chop onions, figs and cashews in small tiny pieces.
Take ghee in a pan. Saute your dry fruits for around a minute. Take them out.
Now add chopped onions and ginger paste.Let the onions turn golden brown. Add green peas.Add salt, red chilli powder and garam masala.Sprinkle some water to avoid the masala from getting burnt. Add fresh paneer. Stir it for couple of seconds.
Bring it off the flame. Add dry fruits and green coriander leaves. Mix it well.
Now, take a spoonful of the paneer filling and stuff the tomatoes.
In a deep pan, take a tablespoon of ghee. Line your stuffed tomatoes and cover the pan with a lid.
Allow it to cook for around 5-6 minutes till the tomatoes become a little tender. Keep turning the tomatoes in between to avoid getting it too charred.

Bring it off the flame and serve it hot with chapatis.
