Black-eye bean croquettes

Black-eye bean Croquettes. Perfect for one of those potluck parties !!
Ingredients:
Black Eye beans: 1 cup
Raw bananas: 2
Butter: 2 tablespoon
Onion: 1 small
Ginger paste: 1 tablespoon
Garlic Paste: 1 tablespoon
Lemon juice: 1/2 lemon
Cumin powder: 1/4 tablespoon
Red Chili powder: 1/4 teaspoon (optional)
Black cardamom : 1/4 teaspoon (crushed)
Green Coriander leaves: Handful
Salt and Pepper to taste
Bread Crumbs: 1 cup
Oil : 1/2 cup

Method: Soak black-eye beans in water for around 5-6 hours. Pressure cook it for 8-10 minutes. It should not be over cooked. Also,boil  raw bananas and peel them.
In a large bowl, take boiled bananas and black-eye beans. Mash them with the potato masher. Add butter while the mixture is still hot. Add chopped onions, ginger-garlic paste,lemon juice,cumin powder,red chili powder,crushed black cardamom,coriander leaves and salt and pepper.
Take a ball sized mixture and flatten it on your palms. Roll it on bread crumbs.Repeat the process with rest of the mixture.
Take a flat griddle and heat it on a stove top.Drizzle 2-4 tablespoon of oil on it. Put the croquettes on the griddle. Once they start turning golden brown ,flip them over and shallow fry on the other side too.

Your Black eye bean croquettes are ready to eat.
Serve it with any dip of your choice.
