Pad Thai Noodle

(Vegetarian Pad Thai Noodle)
Our Thai sojourn would be incomplete without having a taste of classic Pad Thai noodles. So here's the recipe ..
Pad Thai Noodles: 1 packet
Bean Sprouts: ½ cup
Sesame oil: 2 tablespoon
Spring Onion: ¼ cup
Garlic: 5 cloves(crushed)
Ginger: 1 Tablespoon (crushed)
Chopped Peanuts: less than ¼ cup
Soy Sauce: 1 tablespoon
Vinegar: ½ tablespoon
Brown Sugar: 1 tablespoon
Tamarind paste: ¼ tablespoon
Fresh red Chili: 1
Salt and Pepper to taste

Soak Pad Thai noodles in warm water or prepare them as per the instructions on the packet.
Drain them and keep them aside.
Take oil in a large skillet. Add crushed ginger and garlic. Sauté it for less than a minute. Add tamarind paste, vinegar, soy sauce, brown sugar, salt and pepper. Add 2 tablespoon of water and let the sauce simmer for a minute. To add some extra heat to your sauce, you can add a fresh red chili or chili peppers to it.
Add Pad Thai noodles and chopped spring onions. Toss it well so that the noodle gets coated with the sauce. Bring your skillet off the flame and add some bean sprouts to the noodles. Toss it again.
To serve,lay your noodles on the plate. Sprinkle some crushed peanuts over it and decorate the noodles with spring onions.
Your Pad Thai noodle is ready to eat !!

Note: Please add bean sprouts towards the end of the cooking otherwise the sprouts would start wilting.You can add any variety of vegetables to your noodle.
