Shredded Cheddar Cheese: 1 cup
Mexican Seasoning: 1 tablespoon
Chilli flakes: to taste
Salt and pepper to taste
Slice onion and capsicum in thin long strips. In a pan, take oil. Add onion . Saute it on a high flame till it starts turning golden brown. Add capsicum.Stir it for 1-2 minutes .Capsicum should be crunchy not too soft. Sprinke salt, pepper, chilli flakes and seasoning.
Bring it off the stove and allow the stuffing to cool.
Take a skillet and grease it slightly.Place your tortilla. Layer it with onions and capsicum stuffing. Top it with shredded cheddar cheese. Cover it with tortilla. With the help of potato masher, press the tortilla so that all the layers bind well. Flip it over and toast it on other other side.
Bring it off the pan. Cut it into pie shaped pieces.
Your capsicum and onion quesadillas are ready to eat.
Serve it hot with salsa and sour cream.
