Baigan ka Bharta (Chokha)

Baigan(Eggplant): 1 large
Onion: 1 (finely chopped)
Garlic: 5 cloves
Tomatoes: 5
Ginger: ½ tablespoon (grated)
Coriander leaves: ¼ cup (chopped)
Green Chili: 1 (optional)
lemon juice: 1/2  tablespoon
Salt: to taste
Pickle Oil: 1 tablespoon

Method: Make 3-4 cuts on eggplant and stuff garlic in that. Roast the eggplant  on a low flame till it’s totally charred.Peel the skin and mash the eggplant. Also, roast the tomatoes on flame. Similarly, peel the sin and mash the tomatoes.
In a large bowl, take mashed eggplant,tomatoes,ginger,green chili,coriander leaves,onion,oil,lemon juice and salt. Mix it well.
Serve it hot with Littis.
Just before serving, garnish it with coriander leaves.
