French style Grilled Potato Salad in herbed vinegar dressing

Potatoes: 3 large
Onion: 1 small
Capsicum (bell pepper): just about 4-5 thin strips
Dijon Mustard: 1 tablespoon(coarsely ground)
Vinegar: 2 tablespoon
Olive Oil: 4 tablespoon
Dried herbs (Parsley, oregano, thyme): ¼ tablespoon
Freshly ground black pepper and Salt to taste

Boil potatoes. Peel them .Cut them into thin circles. Slice onions and capsicum in thin strips.
In a bowl, take olive oil, vinegar, Dijon mustard, herbs, salt and pepper. Whisk them so the flavors get mixed evenly.

 Pour the dressing over the potatoes, onions and capsicum. Grill it for around 15-20 minutes or till the potatoes come out charred.
Let it cool. Just before serving, garnish it with some parsley.
