Pakodas


(Deep fry assorted vegetables fritters-Indian Style)
Ingredients:
Onion: 1 large
Potato: 1 large
Green chili (Jalapeno): 2
Cauliflower: 10 florets
Bottle gourd(Lauki): 1
For the batter:
Gram Flour(besan): 2 cups
Sooji(semolina): ¼ cup
Garam Masala: 1 tablespoon
Red Chili powder:: ¼ tablespoon(or as per taste)
Ginger-Green chili paste: 1 tablespoon
Kasoori methi: 2 tablespoon
Lemon: ½
Yogurt: 2 tablespoon
Chat Masala: ½ tablespoon
Heeng(Asafoetida): pinch
Salt to taste
Oil for deep frying

Method:
In a large bowl take besan,sooji,garam masala, ginger-green chili paste,red chili powder,salt,kasoori methi,yogurt,chat masala and heeng. Squeeze in some lemon. Whisk it such that ingredients get mixed evenly.Add some water to make a thick batter.
Meanwhile,slice onions lengthwise, potatoes and bottle gourd in rings. Slit Jalapenos from the centre and scoop out the seeds to remove the excesss heat. Cut cauliflower in bite sized florets.
Take oil in a kadhai and let it heat. Now dip these vegetables in the gram flour batter and deep fry them in the oil. Once the veggies start turning golden brown, flip them over and fry on the other side. Take them out and lay them on a paper towel to drain any excess oil.
Serve it hot with green chutney or ketchup of your choice.
