Caramelized Onion and Olive Focaccia

(Italian flat bread topped with caramelized onion and olives)
For the bread:
Plain Flour: 2 cups
Dry Yeast: 1 tablespoon
Olive Oil: ¼ cup
Sugar: 1 tablespoon
Salt: ¼ tablespoon
Water: for kneading the dough
Onion: 1 large
Olive: ¼ cup
Olive oil: 2 tablespoon
Garlic: 8 cloves
Oregano: ½ tablespoon
Crushed Black pepper: ¼ tablespoon
Chilli flakes:  to taste
Parmesan Cheese: ¼ cup (optional)

Soak dry yeast in a luke warm water for around an hour. The yeast should get dissolved in the water. Take plain four in a deep dish. Add sugar, salt, olive oil and the dissolved yeast mix. Add some water. Make smooth dough. Cover it with damp cloth and let the dough sit for at least 2 hours for it to rise.
Meanwhile, get your toppings ready. Take olive oil in a skillet. Add crushed garlic, orergano, salt, black pepper and few chili flakes. Give it a stir. Add sliced onion. Sauté it till it turns golden brown in color and is caramelized. Throw in some olives.
Take out the dough. You would see the dough has doubled up in size. Take ball sized dough and roll it out to make it in a flat ½ inch thick rectangle shape. Press it with your fingers.Grease your baking tray with olive oil. Put the rolled out rectangle dough on the tray. Slide it in the pre-heated  oven and bake it for 20 minutes at 190 C. Once the bread starts turning light golden brown,take it out and add the caramelized onions and olives.
Bake for another 8-10 minutes.
Your Caramelized onion and Olive Focaccia bread is ready to eat. Just before serving, dust some parmesan cheese and Italian seasoning.
Serve it with Minestrone soup.
