Potato Croquettes

Boiled Potatoes: 5 large
Onion: 1 small
Coriander leaves: 2 sprigs
Salt to taste
Dry Bread crumbs: ½ cup
Oil for shallow frying

Mash the potatoes with the help of potato masher.
Chop onion and coriander leaves. Add the chopped ingredients to the mashed potatoes. Add salt to taste. Take a ball sized potato mix and flatten it on your palms. Roll them onto the bread crumbs.
Take a flat griddle. Let it heat. Start placing your potato discs on the griddle. Drizzle some oil on the sides. Once the potatoes start turning light brown, flip them over.
Your Potato Croquettes are ready to eat. Serve them with any dip of your choice.
Note: If you like, you can deep fry your croquettes too.
