Pita Bread

Plain Flour: 2 cups
Fruit Salt: 2 tablespoon
Sugar: 1 tablespoon
Oil: 2 tablespoon
Water: for kneading the dough.

Method: Mix flour, fruit salt and oil. Add water gradually to form a soft and elastic dough.
Let it sit for at least 2 hours to rise. Now take ball size dough and roll it to about 6-7 inches diameter disc. It should be a little thick.Meanwhile, heat a non stick griddle and put the rolled out disc on it. Once the dics starts turning light brown, turn it over. Wait for another minute. Now take the griddle off the stove and with the help of tongs, put the disc on the flame till they start puffing up. Similarly, repeat the process for the rest of the dough.
Your pita bread is ready. Cut it into halves and voila there you have pockets in the pita bread.
 Serve your pocketed pita bread with falafel or use it for making sandwiches,rolls or wraps.

NOTE: Eno fruit Salt is available in most Indian grocery stores in India and abroad.
