Lauki Raita

(Boiled bottle gourd mixed in yogurt and garnished with cumin powder and coriander leaves)
Lauki(Bottle Gourd): 1 small
Yogurt: 2 cups
Salt to taste
Roasted Cumin Powder : ½  tablespoon
Red Chilli powder: Optional
Black Salt: pinch
Green Coriander leaves: ½  table spoon
Method: Peel the bottle gourd. Grate it. Now put it for boiling. Let it boil for around 5-10 minutes till it is tender. Strain it. Squeeze the boiled bottle gourd to remove any excess water. Mix it with the yoghurt in a bowl. Add salt. Garnish it with roasted cumin powder, red chillies, black salt and coriander leaves.
Your nutritious lauki raita is ready to eat.
Serve it with the stuffed paratha or pulao of your choice.
