Makke ka Chilla

(Savoury crepes prepared with corn kernels,gram flour and some fresh herbs and veggies).
Corn kernels: 1 Cup
Gram flour(Besan): 1 Cup
Grated Ginger:1/2 Teaspoon
Finely chopped Onion:1 small
Green Chili: 1
Coriander leaves:  handful
Asaftida: pinch
Salt to taste
Fruit Salt( Eno): 1/2 teaspoon
Oil for cooking

Scrape the corn kernels from the cob and grind it coarsely in the mixer.
In a deep bow, take gram flour,corn kernels,grated ginger, salt and asaftida. Add water gradually to the mix to make a thick batter. Stir it well so that no lumps are formed. Once the mixture is smooth, add chopped onion. coriander leaves and green chilies. Add fruit salt and stir it once.
Meanwhile, preheat the griddle. Drizzle half a teaspoon of oil. Pour a ladle full of batter on the griddle and spread it to make a 6 inch thin crepe. Let it cook for two minutes or till it turns golden brown. Flip it over and cook on the other side.
Bring it off the pan. Repeat the process for rest of the mixture.

Serve it hot with salad and  any chutney/dip of your choice.
Your delicious Makke ka chilla is ready to eat.

Almond Butter Toast with Banana,Berries and Coconut

Whole Wheat slices: 2
Banana: 1
Almond Butter: 2 Tablespoon
Strawberry: 2
Blueberry: 7-8
Desiccated coconut: 1/2 tablespoon
Honey : 2 tablespoon

Cut banana, strawberries and apricots in thin round slices.Divide the fruits for two slices.

Toast the bread slices till slightly crisp.Spread a tablespoon of almond butter over the toasted slice.
Top it with slices bananas, strawberries,apricots and blueberries. Sprinkle desiccated coconut over the fruits. To give the final taste, drizzle a tablespoon of honey over the fruits.
Serve it immediately.
Repeat the process for the second slice.

Greek Pizza with feta,spinach and olives

Whole Wheat Pizza Crust: 2 (large)
Spinach: 1 bunch
Garlic: 1/2 tablespoon (minced)
Feta Cheese: 1/2 Cup
Mozzarella cheese: 1 Cup
Tomato : 2
Black olives: 1/4 Cup
Onion: 1 small
Seasoning: as per taste

Wash spinach thoroughly. Chop it finely. In a shallow pan, heat a tablespoon of olive oil. Add minced garlic and chopped onion. Saute it till onions turn a little charred. Add chopped spinach. Stir it for a minute or two. Turn off the heat and transfer it to a bowl.

Preheat oven to 350F. Meanwhile, add mozzarella cheese, crumbled feta, tomato slices, olives and spinach over the pizza crust. Bake it in the oven for 10-12 minutes or till the cheese starts bubbling.
Repeat the process for the second  crust.
Bring it out of the oven and serve it hot. Sprinkle some seasoning over the pizza.
